Ok. Here they are again, last time! So, I want even dare say how many batches of these I’ve made. I’ll just say that I share them… most of the time. These pass the hubby, step-kids, and best friends test! They are loved by all! I just wanted to post my latest batch, which was concocted using a mod podge of dairy ingredients. Instead of using all cottage cheese, I used a little cottage cheese, a little greek yogurt, and a little kefir (or milk). This mod podge made for a fluffier, more desirable texture, and better tasting (although, the straight cottage cheese are pretty dern tasty) final product!
These pancakes are a perfect addition to your pre and post workout nutrition. Great for breakfast (as pancakes topped with homemade blue/blackberry syrup) or a turkey sandwich (no sweetener added to this batch). Opportunities abound!
And as I’ve mentioned before, most grains have been cut out of my diet… most grains, EXCEPT oats. I’ve been keeping a DETAILED food journal for 7 months and I know oats work for me. No kooky, uncomfortable, or weird bodily sensations afterwards.
So… try these yummy, super high protein, low carb ‘pancakes’ out! Again, the recipe can be found here http://eatingwelllivingthin.wordpress.com/2009/08/10/no-way-cottage-cheese-in-pancakes-yes-way/. The author of this site has many other yummy, creative recipes to try!
